Domaine Font Du Vent Côtes du Rhône 'Promises' Blanc is a fresh and elegant white wine from the village of Domazan, located across the river from Châteauneuf-du-Pape on the western side of the Rhône Valley. Made from a blend of Viognier, Clairette, Grenache Blanc, and Roussanne, it offers floral and citrus aromas with hints of tropical fruit. A fine mineral finish gives the wine a crisp, refreshing quality that makes it ideal as an apéritif or a versatile food wine.

Domaine Font Du Vent is part of the Gonnet family's winemaking legacy, rooted in the Southern Rhône since the 1600s. The estate headquarters was built in 1880, and the Font du Vent property, acquired in 2002, is located in Domazan. Managed by cousins Bertrand and Guillaume Gonnet, the vineyards are farmed organically, and the wines reflect purity, balance, and terroir expression. 'Promises' Blanc is a bright and aromatic white that showcases the region's potential for elegant blends.

Brandade de Morue (Salt Cod and Potato Purée)
Ingredients:
- 400g salt cod, soaked overnight
- 2 potatoes, peeled and diced
- 3 garlic cloves, minced
- 150mL olive oil
- 100mL milk
- 1 bay leaf
- Salt and pepper, to taste
- Chopped parsley for garnish
Instructions:
- Boil potatoes with a bay leaf until tender. Drain and mash.
- Simmer the soaked salt cod in water for 10 minutes, drain, and flake.
- In a pan, warm milk and olive oil with garlic. Stir into the potatoes.
- Add flaked cod, season, and stir until smooth and well combined.
- Serve warm, garnished with parsley and a glass of Domaine Font Du Vent 'Promises' Blanc.
