Vegan Wild Mushroom Risotto with Lemon and Thyme
Ingredients:
- 400g Arborio rice
- 300g mixed wild mushrooms (such as cremini, shiitake, and oyster), cleaned and sliced
- 1 medium onion, finely chopped
- 3 garlic cloves, minced
- 1 litre vegetable broth, kept warm
- 1/2 cup vegan white wine (optional)
- 2 tbsp olive oil
- 1 tbsp vegan butter (or unsalted butter)
- Salt and pepper, to taste
- Juice of 1 lemon
- 1 tsp fresh thyme leaves, chopped
- Fresh parsley, chopped (for garnish)
Instructions:
- In a large saucepan, heat the olive oil over medium heat. Sauté the chopped onion and garlic until translucent, about 3 minutes.
- Add the sliced wild mushrooms and cook for 5–7 minutes until they release their moisture and begin to brown. Season lightly with salt and pepper.
- Stir in the Arborio rice and toast for 1–2 minutes until each grain is well-coated. If using vegan white wine, add it now and allow it to absorb completely.
- Begin adding the warm vegetable broth one ladle at a time, stirring continuously. Allow each addition to be absorbed before adding the next, and continue for 18–20 minutes until the rice is creamy and al dente and the mushrooms are tender.
- Stir in the vegan butter, lemon juice, and fresh thyme. Adjust seasoning with salt and pepper as needed.
- Remove from heat and garnish with freshly chopped parsley. Serve immediately.
