Vegan Wild Mushroom Risotto with Lemon and Thyme

Ingredients:

  • 400g Arborio rice
  • 300g mixed wild mushrooms (such as cremini, shiitake, and oyster), cleaned and sliced
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 1 litre vegetable broth, kept warm
  • 1/2 cup vegan white wine (optional)
  • 2 tbsp olive oil
  • 1 tbsp vegan butter (or unsalted butter)
  • Salt and pepper, to taste
  • Juice of 1 lemon
  • 1 tsp fresh thyme leaves, chopped
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. In a large saucepan, heat the olive oil over medium heat. Sauté the chopped onion and garlic until translucent, about 3 minutes.
  2. Add the sliced wild mushrooms and cook for 5–7 minutes until they release their moisture and begin to brown. Season lightly with salt and pepper.
  3. Stir in the Arborio rice and toast for 1–2 minutes until each grain is well-coated. If using vegan white wine, add it now and allow it to absorb completely.
  4. Begin adding the warm vegetable broth one ladle at a time, stirring continuously. Allow each addition to be absorbed before adding the next, and continue for 18–20 minutes until the rice is creamy and al dente and the mushrooms are tender.
  5. Stir in the vegan butter, lemon juice, and fresh thyme. Adjust seasoning with salt and pepper as needed.
  6. Remove from heat and garnish with freshly chopped parsley. Serve immediately.
