Domaine Gérard Boulay Sancerre Comtesse comes from 0.4 hectares of seventy-year-old vines at the chalky centre of Les Monts-Damnés, a parcel that remained ungrafted until after 1945.
Chavignol lies west of the town of Sancerre, and its steep Kimmeridgian slopes are the most highly regarded in the appellation. Comtesse is a lieu-dit at the heart of Les Monts-Damnés and has been considered the finest single terroir of the village for centuries; Thibaut Boulay traces a reference to the site in abbey documents of 1252, and by the 1878 Paris exhibition its wines were served at the leading tables of northern France. The soil is pure Kimmeridgian limestone with a topsoil of only thirty to forty centimetres over bedrock, which absorbs heat during the day and releases it at night. The position itself is cooler and less exposed than much of Monts-Damnés, so the fruit ripens fully while retaining acidity, giving a finer and more restrained wine than the vineyard usually produces.
Drink from a year after release and across the following eight. Serve at 10-12°C with Crottin de Chavignol, grilled asparagus or steamed white fish.
