Description

Domaine Gérard Boulay Sancerre Rosé Sibylle is made from Pinot Noir grown expressly for rosé on the steep slopes of Chavignol.

Sancerre is best known for Sauvignon Blanc, but it also holds a disproportionate share of France's serious rosés, from producers such as Alphonse Mellot, Cotat and Vacheron. Gérard Boulay works the Chavignol hillsides, where the Kimmeridgian marl known locally as terres blanches gives wines of unusual tension. This rosé comes from around 0.8 hectares of thirty-five to fifty-year-old Pinot Noir, planted with rosé in mind rather than as a by-product of red production, and Boulay draws on a little more in vintages that are difficult for reds. The hand-harvested fruit macerates for twenty-four hours. Press wine and free-run juice are fermented separately on indigenous yeasts, and malolactic conversion is blocked to keep the acidity intact. No oak is involved at any point.

Best drunk in its first two to three years. Serve at 10-12°C with grilled prawns, salade niçoise or a plate of charcuterie.
