Roasted Portobello Mushrooms with Walnut Pesto (Vegan)
Ingredients:
- 4 large portobello mushroom caps, stems removed
- 2 tbsp olive oil
- Salt and pepper, to taste
- For the Walnut Pesto:
- 1 cup walnuts
- 1 garlic clove
- 1/2 cup fresh basil leaves
- 2 tbsp nutritional yeast (optional)
- 2 tbsp lemon juice
- 1/3 cup olive oil
- Salt and pepper, to taste
- Fresh arugula or mixed greens, for serving
Instructions:
- Preheat your oven to 200°C. Brush the portobello mushrooms with olive oil, and season with salt and pepper. Roast them on a baking sheet for 15 minutes until tender.
- Meanwhile, in a food processor, combine the walnuts, garlic, basil, nutritional yeast (if using), lemon juice, and olive oil. Blend until smooth, and season with salt and pepper to taste.
- Arrange a bed of fresh arugula on each plate. Slice the roasted mushrooms and place them atop the greens.
- Drizzle the walnut pesto generously over the mushrooms, garnish with additional basil leaves if desired, and serve immediately.
