- 1 tbsp olive oil
- 2 shallots, thinly sliced
- 1 cup Pinot Noir (choose a light-bodied Burgundy Pinot Noir)
- 1/2 cup chicken stock
- 1 tsp fresh thyme leaves
- 1 tbsp unsalted butter (optional)
- Fresh parsley, chopped (for garnish)
Instructions:
- Season the chicken thighs generously with salt and pepper.
- Heat olive oil in a heavy-based skillet over medium-high heat. Place the chicken thighs skin-side down and sear for 5–6 minutes until the skin is crisp and golden. Flip and sear the other side for an additional 3 minutes. Remove the chicken from the pan and set aside.
