Ingredients:

  • 4 chicken thighs (skin-on)
  • Salt and pepper, to taste
  • 1 tbsp olive oil
  • 2 shallots, thinly sliced
  • 1 cup Pinot Noir (choose a light-bodied Burgundy Pinot Noir)
  • 1/2 cup chicken stock
  • 1 tsp fresh thyme leaves
  • 1 tbsp unsalted butter (optional)
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Season the chicken thighs generously with salt and pepper.
  2. Heat olive oil in a heavy-based skillet over medium-high heat. Place the chicken thighs skin-side down and sear for 5–6 minutes until the skin is crisp and golden. Flip and sear the other side for an additional 3 minutes. Remove the chicken from the pan and set aside.
  3. Add the sliced shallots to the pan and sauté until softened, about 2 minutes. Deglaze the pan with the Pinot Noir, scraping up any browned bits.
  4. Pour in the chicken stock and add the thyme leaves. Bring the mixture to a gentle simmer, then return the chicken to the pan.
  5. Allow the chicken to simmer in the sauce for 10–12 minutes until cooked through. If desired, stir in the butter for a silkier sauce.
  6. Plate the chicken thighs, spoon the red wine shallot sauce over them, and garnish with fresh parsley.
