    • 1 yellow bell pepper, diced
    • 1 onion, chopped
    • 3 garlic cloves, minced
    • 400g diced tomatoes (canned or fresh)
    • 2 tbsp olive oil
    • 1 tsp dried thyme
    • 1 tsp dried oregano
    • Salt and pepper, to taste
    • Fresh basil, chopped (for garnish)
  • For the Herbed Polenta:
    • 1 cup polenta (cornmeal)
    • 4 cups water or vegetable broth
    • Salt, to taste
    • 1 tbsp olive oil (optional)
    • Fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat your oven to 190°C. Toss the diced eggplant, zucchinis, bell peppers, onion, and garlic with olive oil, thyme, oregano, salt, and pepper. Spread the vegetables evenly on a baking sheet and roast for 25–30 minutes until tender and slightly caramelized.
  2. Meanwhile, in a saucepan, bring the water or vegetable broth to a boil with a pinch of salt. Gradually whisk in the polenta, reduce the heat, and simmer, stirring frequently, until the mixture thickens to a creamy consistency (about 20 minutes). Stir in the olive oil if using, and adjust seasoning. Garnish with fresh parsley.
  3. Once the vegetables are roasted, transfer them to a large pot and add the diced tomatoes. Simmer the ratatouille gently for about 10 minutes to meld the flavors. Adjust salt and pepper as needed and stir in fresh basil at the end.
