Domaine Goisot Bourgogne Côtes d'Auxerre Corps de Garde Blanc 2021

Domaine Goisot Bourgogne Côtes d'Auxerre Corps de Garde Blanc takes its name from the family's fourteenth-century guardhouse and cellar.

The Côtes d'Auxerre lies in the Yonne, closer to Chablis than to the Côte d'Or, and works a comparable mix of Portlandian and Kimmeridgian limestone. This white is cropped from the lieux-dits of Belle Croix, Biaumont, Gondonne, Chaussan and Gueules de Loup, together with a number of parcels too small to vinify separately. Across those sites vine age averages thirty-five to forty years. The vineyards are farmed biodynamically. The wine is raised exclusively in barrel, a quarter of it new, including some 500-litre demi-muids. The guardhouse the cuvée is named for was probably used as a hideout when the village came under attack in the medieval period, and it still serves as the family's cellar. This is the domaine's benchmark white and its clearest statement of what the appellation can do.

Drinking well now and holding five to seven years. Serve at 10-12°C with grilled fish, chicken in cream sauce or a plate of oysters.
