Domaine Goisot Bourgogne Côtes d'Auxerre Gueules de Loup Blanc is a barrel-raised single-vineyard Chardonnay on almost pure limestone.
The Côtes d'Auxerre lie in the Yonne, the same cool northern reach of Burgundy that produces Chablis, and Chardonnay grown here keeps a mineral spine that the warmer Côte de Beaune rarely matches at this price. Domaine Goisot works its parcels at Saint-Bris-le-Vineux as individual sites. Gueules de Loup is arguably the most picturesque vineyard of the appellation, named for the snapdragons that flourish in its soils. The one-hectare site faces south to southeast on soils that are almost pure limestone, a Portlandian downwash that lends the wine its mineral backbone without stripping it of opulence. The vines are over forty years old. The Goisots consider this terroir close to that of the Chablis premier cru Vaillons, though the wine carries more of what they would call white Burgundy personality than Vaillons usually does. Maturation takes place entirely in barrel, on lees.
Drink now or over the next six or seven years. Serve at 10-12°C with roast chicken, scallops or a gruyère tart.
