Domaine Goisot Faucertaine is a Chablis from a small inherited parcel at Bienes, farmed biodynamically since the domaine took it over.
Guilhem Goisot inherited the 0.4-hectare plot in 2014 from the father of his wife, Marie, who had planted it in 1976. The lieu-dit is called Faucertaine and lies just north of Chitry, at the southern edge of the Chablis appellation, on fossil-rich limestone soils that Goisot likens to those of his Gondonne vineyard in the Côtes d'Auxerre. The domaine converted the parcel to biodynamic farming, in line with the rest of its holdings. The wine was fermented in tank and then aged on lees in four 500-litre barrels, one of them new, so there is a little more breadth here than in a tank-raised Chablis without losing the appellation's cut.
Drinking now and will hold five to eight years. Serve at 10-12°C with oysters, grilled flathead or a young goat's cheese.
