Domaine Henri Germain Bourgogne Côte d'Or Blanc is drawn from about a hectare of vines spread across four Meursault and Chassagne sites.
The Bourgogne Côte d'Or appellation exists to separate regional white grown on the Côte d'Or from Bourgogne made in other parts of the region, and it typically covers parcels that fall just outside the village boundaries. Germain's holdings amount to roughly a hectare over four terroirs. Three are in Meursault: Les Belles Côtes, immediately below Les Chevalières, Au Jardin, and Petit Clos, a genuine walled clos beside the winery in the centre of the village. A fourth parcel in Chassagne came into production with the 2016 harvest. The fruit is handled exactly as the village wines are, with whole-bunch pressing, natural fermentation and an élevage in used barrel followed by a rest in tank, which gives a wine with more depth and grip than the appellation usually delivers.
Ready on release and worth drinking over three or four years. Serve at 10-12°C with grilled flathead, chicken salad or a soft goat's cheese.
