Description
Les Chataigners is Domaine Hubert Lamy's Bourgogne Blanc, drawn from vines on the edge of the Saint-Aubin vineyards.
The parcel lies on the lower, flatter land that falls outside the village appellation boundary, where the soil is deeper and the drainage less severe than on the slope above. In most hands that would make for a simple wine, but Lamy farms and vinifies it much as he does the rest of the range: yields are held down, the fruit is hand-picked and whole-bunch pressed, fermentation runs with natural yeasts, and the wine is aged on its fine lees in barrel and larger cask without stirring. It is the domaine's entry point and the easiest way to see how the house makes white wine.
Drink over the next two to four years; serve at 10-12°C with oysters, roast chicken or a plate of charcuterie.
