Domaine Hubert Lamy Bourgogne Blanc Les Chataigners comes from the highest and coolest vineyard the domaine farms.

Bourgogne Blanc is Burgundy's catch-all white appellation, but Les Chataigners is a named site and Lamy treats it as one. He farms four small parcels here on the white limestone soils at the far end of the village of Saint-Aubin, with vines planted in 1990 and 2008. Altitude and exposure make this his coolest holding, which in warm seasons is an increasing advantage. The fruit is whole-bunch pressed and fermented with indigenous yeasts before being raised in older barrels, so there is no new oak character to speak of and the wine keeps its clarity. It has long been regarded as one of the more impressive Bourgogne-level whites made anywhere on the Côte, and it is priced well below what the winemaking would suggest.

Drink over the next four to six years. Serve at 10–12°C with oysters, grilled fish or a simple roast chicken.
