Domaine Hubert Lamy Bourgogne Blanc Les Chataigners comes from the estate's highest and coolest vineyard, on white limestone at the far end of Saint-Aubin.

Les Chataigners sits within the finage of Saint-Aubin but outside the village appellation boundary, so the wine is sold under the regional Bourgogne Blanc title. Lamy farms four small parcels here, planted in 1990 and 2008, on white limestone soils. As the domaine's highest and coolest site it ripens late, which in warm seasons is an advantage rather than a handicap. The fruit is whole-bunch pressed and ferments spontaneously before ageing in older barrels, the same handling the estate gives its premier crus. This has long been among the more serious regional whites made on the Côte de Beaune, and it regularly includes declassified premier cru fruit, which goes some way to explaining the weight it carries for its appellation.

Drinking well on release and good for three to five years. Serve at 10-12°C with grilled fish, a leek quiche or a salad of goat's cheese and walnuts.
