Domaine Hubert Lamy Bourgogne Blanc Les Chataigners comes from the highest and coolest climat the domaine farms, at the far end of Saint-Aubin.

Bourgogne Blanc is the regional appellation, which means the label tells you very little and the grower tells you everything. Olivier Lamy farms four small parcels on the white limestone soils of Les Chataigners, a vineyard tucked away at the end of the village, planted in 1990 and 2008. Altitude and exposure make it the coolest site in his holdings, which shows in the wine’s cut and its late picking date. In most years the cuvée also carries a good quantity of declassified fruit from higher appellations, one reason it has long been among the most impressive Bourgogne-level whites on the Côte de Beaune. Winemaking follows the house pattern, with the wine raised largely in large Stockinger casks in the domaine’s newer cellar, keeping oak influence in the background.

Ready on release and good for four to six years. Serve at 10-12°C with oysters, grilled prawns or a simple roast chicken.
