Beef Bourguignon
Ingredients:
- 1kg beef chuck, cubed
- 2 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 2 carrots, sliced
- 1 cup red wine
- 2 cups beef stock
- 2 tbsp tomato paste
- Salt and pepper, to taste
- Fresh thyme, for garnish
Instructions:
- Heat olive oil in a large pot. Brown beef cubes on all sides. Remove and set aside.
- Sauté onion, garlic, and carrots until softened.
- Return beef to the pot, add red wine, beef stock, and tomato paste. Season with salt and pepper.
- Simmer for 2-3 hours until beef is tender. Garnish with fresh thyme and serve warm.
