With 50 hectares of vines planted on a mix of limestone, clay, and sandy soils, the estate is deeply committed to expressing its terroir. The rosé is crafted using traditional methods, with Mourvèdre as the core varietal lending structure and depth, balanced by the freshness of Cinsault and Grenache. The magnum format enhances ageing potential and is ideal for shared meals and celebrations.

Ratatouille (Provençal Vegetable Stew)

Ingredients:

  • 1 eggplant, diced
  • 1 zucchini, sliced
  • 1 red capsicum, chopped
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 4 ripe tomatoes, chopped
  • 3 tbsp olive oil
  • 1 tsp herbes de Provence
  • Salt and pepper, to taste
  • Fresh basil, for garnish

Instructions:

  1. In a large pan, heat olive oil and sauté onion and garlic until soft.
  2. Add eggplant, capsicum, and zucchini. Cook for 5–7 minutes until starting to soften.
  3. Add tomatoes, herbes de Provence, salt, and pepper. Cover and simmer for 30–35 minutes until vegetables are tender.
  4. Adjust seasoning and garnish with fresh basil before serving.
