Tarte aux Légumes (Vegetable Tart)
Ingredients:
- 1 sheet puff pastry
- 1 zucchini, thinly sliced
- 1 red capsicum, diced
- 1 small onion, finely chopped
- 2 tbsp olive oil
- 100g goat cheese, crumbled
- 1 egg
- 100mL cream
- Salt and pepper, to taste
- Fresh thyme for garnish
Instructions:
- Preheat oven to 180°C. Line a tart tin with puff pastry and prick the base with a fork.
- Heat olive oil in a skillet over medium heat. Sauté onion, zucchini, and capsicum until softened. Season with salt and pepper.
- In a bowl, whisk together the egg and cream. Stir in half the goat cheese and season with salt and pepper.
- Spread the sautéed vegetables evenly over the pastry base. Pour the egg mixture on top and sprinkle with the remaining goat cheese.
- Bake for 25-30 minutes, or until golden and set. Garnish with fresh thyme before serving.
