Recipe

Tarte aux Légumes (Vegetable Tart)

Ingredients:

  • 1 sheet puff pastry
  • 1 zucchini, thinly sliced
  • 1 red capsicum, diced
  • 1 small onion, finely chopped
  • 2 tbsp olive oil
  • 100g goat cheese, crumbled
  • 1 egg
  • 100mL cream
  • Salt and pepper, to taste
  • Fresh thyme for garnish

Instructions:

  1. Preheat oven to 180°C. Line a tart tin with puff pastry and prick the base with a fork.
  2. Heat olive oil in a skillet over medium heat. Sauté onion, zucchini, and capsicum until softened. Season with salt and pepper.
  3. In a bowl, whisk together the egg and cream. Stir in half the goat cheese and season with salt and pepper.
  4. Spread the sautéed vegetables evenly over the pastry base. Pour the egg mixture on top and sprinkle with the remaining goat cheese.
  5. Bake for 25-30 minutes, or until golden and set. Garnish with fresh thyme before serving.
