Ingredients:
- 2 magrets de canard
- Salt and pepper, to taste
- 1 tbsp olive oil
- 1 shallot, finely chopped
- 1 cup fresh or pitted cherries (or use frozen if needed)
- 1/2 cup red wine (optional – can substitute with a light fruit juice blend)
- 1 tsp honey
- 1 tsp balsamic vinegar
- Fresh thyme leaves, for garnish
Instructions:
- Score the skin of the duck breasts in a criss-cross pattern. Season both sides generously with salt and pepper.
- Heat the olive oil in a skillet over medium-high heat. Place the duck breasts skin-side down and cook until the fat renders and the skin is crisp, about 6–8 minutes. Flip and cook the other side for 3–4 minutes for medium-rare. Remove from heat and let rest for 5 minutes.
- In the same skillet, add the chopped shallot and sauté until softened, about 2 minutes.
- Add the cherries, red wine, honey, and balsamic vinegar. Bring the mixture to a simmer and cook until the sauce reduces slightly and the cherries soften, about 5–7 minutes.
