Domaine Moreau-Naudet Chablis 1.5L MAGNUM 2024

Domaine Moreau-Naudet Chablis is a village-level Chablis from the Yonne, in magnum.

Thirty parcels scattered across the appellation feed this wine, which is a lot of ground to farm and a lot of soil types and exposures to blend. The backbone is twenty to thirty-year-old vines at Préhy and Courgis, south of the town, with additions from Chablis itself and from Chichée beneath the Premier Cru slopes of Vaugiraut and Vosgros; a single 3.5-hectare parcel straddling Préhy and Courgis is the largest holding. Anything off the youngest vines is sold in bulk, which lifts what goes into bottle. Pressing runs slow, about four hours, fermentation is on wild yeast, still uncommon here, and the wine is raised mostly in tank for twenty months on lees. Sealed under Diam.

Long lees ageing gives this a mouth-coating texture unusual at village level, over lemon, green apple and wet stone with a salty finish. Serve at 10 to 12 degrees. Oysters are the obvious call, and it is equally good with grilled flathead, roast chicken, or a young Chaource. A magnum suits a table of six or more.
