Domaine Moreau-Naudet Chablis 1er Cru Vaillons is blended from three lieux-dits on the left bank of the Serein, including a parcel of 75-year-old vines in Sécher.
Vaillons sits mid-slope on the left bank of the river, a well-placed premier cru whose reputation has been built by a handful of committed growers. Moreau-Naudet works vines planted in 1974 in Les Epinottes, a cooler corner of the vineyard, and in Roncières, which gives more opulence. The parcel of 75-year-old vines in Sécher usually makes up about 30 per cent of the blend and supplies mineral cut and structure. Each parcel is picked and vinified separately, fermented and matured in a combination of stainless steel tank and older barrels, then assembled before bottling. Nothing in that regime is designed to add flavour: the tank keeps the fruit clear and the old wood softens the edges, which is why Vaillons here reads as firm and juicy rather than solar, despite being one of the warmer sites the domaine farms.
Drinkable now, though a further few years in bottle will reward the patient, and it will hold for eight or so. Serve at 10-12°C with oysters, grilled john dory or a fresh goat's cheese.
