Domaine Moreau-Naudet Chablis Les Pargues Vieilles Vignes comes from a lieu-dit on the ridge between the Montmains and Vosgros premiers crus that locals maintain was left out of the classification by accident.

Chablis lies well north of the Côte d’Or, its Chardonnay planted on Kimmeridgian marl. Les Pargues shares its exposure with Vaillons and Montmains, and the story told locally is that the site was classified premier cru before the AOC was formalised, only to be largely abandoned during the wartime labour shortage and then left off the list when the boundaries were drawn. Whatever the accuracy of that account, the position and the thin, stony soils give an intense, mineral wine. Moreau-Naudet’s parcel is tiny, the vines average more than 50 years, and yields typically run at only 15 to 25 hl/ha. Barrel accounts for just 10 per cent of the maturation, leaving the site to do the talking. The wine is sealed under Diam.

Drinking now and worth five to eight years. Serve at 10-12°C with oysters, grilled flathead or a plate of prawns.
