Domaine Paul Pillot Bourgogne Blanc Aligoté 2020

Domaine Paul Pillot Bourgogne Aligoté is drawn from estate vines in Chassagne-Montrachet and several parcels in the Côte Chalonnaise.

Aligoté is Burgundy's second white grape, long treated as an afterthought and now taken seriously by a growing number of the region's better growers. Paul Pillot, run today by Thierry and Chrystelle Pillot from Chassagne-Montrachet, farms 1.5 hectares for this cuvée, part on estate-owned land in Chassagne and the rest across the Côte Chalonnaise to the south. As with all the whites here, the grapes are whole-bunch pressed and fermented on indigenous yeasts. The wine then spends time on its lees, without stirring, in a mix of stainless steel tanks and older oak barrels: the tanks preserve the freshness and cut that make Aligoté worth drinking, while the barrels build a little mid-palate richness and texture. The result is crystalline and racy rather than lean, and a reminder of what the variety can do in good hands.

Drink over the next three or four years. Serve at 10-12°C with oysters, a plate of charcuterie or gougères.
