Description

Domaine Paul Pillot's Bourgogne Blanc comes largely from a single northeast-facing parcel just south of Chassagne-Montrachet, with a little village fruit in the blend.

Bourgogne Blanc is the regional appellation for Chardonnay, and its quality depends almost entirely on where the vines sit. Pillot's well-situated 0.6-hectare parcel lies on a hillside outside Chassagne, facing northeast, an aspect that slows ripening and holds acidity; the vines are now 35 years old. The grapes are hand-picked, pressed and left to settle, then fermented naturally and kept on lees for 12 months in small stainless-steel vats and older barrels. There is no new oak, so the wine keeps a direct line, with ripe lemon and nectarine fruit and a briny, tangy close. It carries more depth than the appellation usually suggests, which is what this domaine has become known for at entry level.

Ready on release and good for three to four years; serve at 10-12°C with oysters, grilled fish or a salad with fresh goat's cheese.
