Domaine Paul Pillot Bourgogne Blanc Chardonnay 2020

Domaine Paul Pillot Bourgogne Blanc comes mostly from a north-east-facing parcel just south of Chassagne-Montrachet, with a little village fruit in the blend.

The regional Bourgogne Blanc appellation is where growers place fruit from land outside the village boundaries, and at a good address that can mean wine well above its station. This cuvée is drawn largely from a well-situated 0.6-hectare parcel on a north-east-facing hillside just south of Chassagne, where the vines are now 35 years old, with a small amount of Chassagne village fruit added. The grapes were hand-picked, pressed, left to settle, then fermented on indigenous yeasts and aged on lees for 12 months in small stainless steel vats and older barrels. The wine was blended and left to settle a further six months in tank before bottling. That long, unhurried handling is what gives it more depth than the label would suggest, and it is a benchmark for the level.

Drinking now and good for four or five years. Serve at 10-12°C with grilled fish, roast chicken or a soft washed-rind cheese.
