Domaine Paul Pillot Bourgogne Blanc Chardonnay 2022

Domaine Paul Pillot's Bourgogne Blanc is the regional Chardonnay of a Chassagne-Montrachet estate best known for its premiers crus.

Bourgogne Blanc is the widest white appellation in the region, and with a grower of this standing the interest lies in whose hands the fruit passes through. The Pillot family have been in Chassagne since the mid-nineteenth century; Paul added the premier cru holdings from 1968, and his son Thierry, who joined in 1999 and took charge in 2007, now farms about thirteen hectares with his sister Chrystelle, organically but without certification. Thierry trains the vines higher to increase leaf surface and de-leafs selectively to balance shade against air movement. From 2011 he lengthened the élevage and reduced the oak across the range, using larger barrels of 350 to 500 litres with a low proportion of new wood and finishing the wines with a spell in stainless steel before bottling. The regional wine is handled in the same manner, on a smaller scale.

Ready on release and good for three or four years; serve at 10-12°C with grilled fish, roast chicken or a plate of charcuterie.
