Domaine Paul Pillot Bourgogne Blanc Chardonnay 2023

Paul Pillot's Bourgogne Blanc comes mainly from a single parcel of 35-year-old vines on a hillside just south of Chassagne-Montrachet.

Domaine Paul Pillot is based in Chassagne-Montrachet and is run by Thierry Pillot with his sister Chrystelle. The regional white draws chiefly on a well-sited 0.6-hectare parcel of 35-year-old vines planted on a north-east-facing slope just south of the village, with a little Chassagne village fruit blended in — an unusually good base for a Bourgogne Blanc. The fruit is hand-picked, pressed and left to settle, then ferments naturally on its lees. Ageing runs for twelve months in small stainless-steel vats and older barrels, after which the wine is blended and rests a further six months in tank before bottling. The absence of new oak keeps the emphasis on the site, and vine age and careful cellar work have lifted this cuvée well above regional level in recent years.

Drink over the next four or five years. Serve at 10 to 12°C with grilled fish, roast chicken or a quiche.
