Description

Domaine Paul Pillot's Bourgogne Rouge is drawn from two estate-owned sites in the southern reaches of Chassagne, near Chagny and Remigny.

Bourgogne Rouge covers the whole region, so the character of any given bottling comes down to the vineyards behind it. Here the soils are the classic clay and limestone of the Côte, and the vines average 35 years of age, both of which lift the wine above the usual expectation for the appellation. Paul Pillot is a Chassagne-Montrachet domaine better known for white wine, now run by Thierry and Chrystelle Pillot, and the same attention goes into the reds. The grapes are handpicked and mostly destemmed before fermenting with wild yeasts, though roughly half the crop is kept as whole bunches for structure and perfume. Maturation runs for 12 months in a mix of steel vats and large used barrels.

Drink now and over the next six or seven years, with roast chicken, pork belly or mushroom dishes, at 16°C.
