Seared Chicken with Raspberry Coulis

Ingredients:

  • 4 chicken thighs (boneless, skinless)
  • Salt and pepper, to taste
  • 2 tbsp olive oil
  • 200g fresh raspberries (or thawed frozen)
  • 1/4 cup light red wine
  • 1 tbsp honey
  • 1 tbsp balsamic vinegar
  • 1 garlic clove, minced
  • Fresh basil, chopped (for garnish)

Instructions:

  1. Season the chicken thighs with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat. Sear the chicken for about 4 minutes per side until golden and cooked through. Remove and set aside.
  3. In the same skillet, add the minced garlic and sauté briefly until fragrant. Then add the raspberries, red wine, honey, and balsamic vinegar. Let the mixture simmer for about 5 minutes until it reduces to a smooth, slightly thick sauce.
  4. If desired, strain the sauce to remove the raspberry seeds, or leave as is for extra texture.
  5. Return the chicken to the pan to warm through and spoon the raspberry coulis generously over the top.
  6. Garnish with fresh basil and serve immediately.
