- 2 tbsp olive oil
- 200g fresh raspberries (or thawed frozen)
- 1/4 cup light red wine
- 1 tbsp honey
- 1 tbsp balsamic vinegar
- 1 garlic clove, minced
- Fresh basil, chopped (for garnish)
Instructions:
- Season the chicken thighs with salt and pepper.
- Heat olive oil in a skillet over medium-high heat. Sear the chicken for about 4 minutes per side until golden and cooked through. Remove and set aside.
- In the same skillet, add the minced garlic and sauté briefly until fragrant. Then add the raspberries, red wine, honey, and balsamic vinegar. Let the mixture simmer for about 5 minutes until it reduces to a smooth, slightly thick sauce.
