Roast Chicken with Mixed Berry Glaze

Ingredients:

  • 4 chicken thighs (bone‐in, skin‐on)
  • Salt and pepper, to taste
  • 2 tbsp olive oil
  • 1 cup mixed berries (such as cherries and raspberries), pitted or lightly mashed
  • 1/4 cup light red wine (a light Burgundy Pinot Noir works well)
  • 1 tbsp balsamic vinegar
  • 1 tbsp honey (optional)
  • 1 garlic clove, minced
  • Fresh thyme leaves, for garnish

Instructions:

  1. Preheat your oven to 200°C.
  2. Season the chicken thighs with salt and pepper. Heat olive oil in an ovenproof skillet over medium‐high heat, and sear the chicken thighs skin‐side down until golden and crisp, about 5 minutes. Flip and sear the other side for 3 minutes, then remove the chicken from the skillet.
  3. Add the minced garlic and mixed berries to the skillet; cook for 2 minutes until the berries begin to soften.
  4. Stir in the red wine, balsamic vinegar, and honey. Let the mixture simmer for 3–4 minutes until it thickens into a glaze.
  5. Return the chicken to the skillet, spooning the glaze over the top, and transfer the skillet to the oven. Roast for an additional 10–15 minutes until the chicken is cooked through.
  6. Remove from the oven, garnish with fresh thyme leaves, and serve immediately.
