- 1 cup brown or green lentils, rinsed
- 1 medium onion, finely chopped

- 2 carrots, diced
- 1 celery stalk, diced
- 1 cup vegetable broth
- 1/2 cup light red wine (optional)
- 1 tsp dried thyme
- 1 bay leaf
- 2 tbsp olive oil
- Salt and pepper, to taste

- Add the diced carrots and celery, cooking for an additional 5 minutes until slightly tender.
- Stir in the wild mushrooms and dried thyme; cook until the mushrooms release their moisture and begin to brown, about 5–7 minutes.
- Add the lentils, bay leaf, vegetable broth, and red wine (if using). Bring to a gentle simmer, then cover and cook for 25–30 minutes until the lentils are tender.
- Remove the bay leaf and adjust seasoning with salt and pepper.
- Garnish with freshly chopped parsley and serve hot.
