  • 1 cup brown or green lentils, rinsed

  • 2 carrots, diced
  • 1 celery stalk, diced
  • 1 cup vegetable broth
  • 1/2 cup light red wine (optional)
  • 1 tsp dried thyme
  • 1 bay leaf
  • 2 tbsp olive oil
  • Salt and pepper, to taste

Instructions:

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened, about 2–3 minutes.
  2. Add the diced carrots and celery, cooking for an additional 5 minutes until slightly tender.
  3. Stir in the wild mushrooms and dried thyme; cook until the mushrooms release their moisture and begin to brown, about 5–7 minutes.
  4. Add the lentils, bay leaf, vegetable broth, and red wine (if using). Bring to a gentle simmer, then cover and cook for 25–30 minutes until the lentils are tender.
  5. Remove the bay leaf and adjust seasoning with salt and pepper.
  6. Garnish with freshly chopped parsley and serve hot.
