  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 400g diced tomatoes (canned or fresh)
  • 2 tbsp olive oil
  • 1 tsp dried thyme

  • Salt and pepper, to taste

Instructions:

  1. Preheat your oven to 200°C. In a large bowl, toss the diced eggplant, zucchinis, bell peppers, onion, and garlic with olive oil, thyme, oregano, salt, and pepper.

  3. Transfer the roasted vegetables to a large pot and add the diced tomatoes. Simmer gently over medium heat for 10 minutes to meld the flavors.
