Ingredients:

  • Salt and pepper, to taste
  • 1 tbsp olive oil
  • 2 tbsp unsalted butter
  • 1 garlic clove, minced
  • Juice of 1 lemon
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat your oven to 180°C.
  2. Season the cod fillets with salt and pepper.
  3. Heat olive oil in an ovenproof skillet over medium-high heat. Sear the cod for 2–3 minutes per side until a golden crust forms.
  4. In a small bowl, mix the melted butter with minced garlic and lemon juice.
  5. Drizzle the lemon butter sauce over the cod fillets, then transfer the skillet to the oven and bake for 5–7 minutes, until the fish is just cooked through.
