Daube de Sanglier (Wild Boar Stew)
Ingredients:
- 1.5kg wild boar shoulder or pork, cubed
- 2 onions, chopped
- 3 carrots, sliced
- 3 garlic cloves, crushed
- 750mL red wine
- 2 tbsp tomato paste
- 2 bay leaves
- 1 sprig rosemary
- Black olives (optional)
- Olive oil
- Salt and pepper, to taste
Instructions:
- Marinate the meat overnight with wine, garlic, onion, herbs, and carrots.
- Drain and sear the meat in olive oil, then set aside.
- Sauté vegetables, add tomato paste, and cook for a few minutes.
