Recipe

Daube de Sanglier (Wild Boar Stew)

Ingredients:

  • 1.5kg wild boar shoulder or pork, cubed
  • 2 onions, chopped
  • 3 carrots, sliced
  • 3 garlic cloves, crushed
  • 750mL red wine
  • 2 tbsp tomato paste
  • 2 bay leaves
  • 1 sprig rosemary
  • Black olives (optional)
  • Olive oil
  • Salt and pepper, to taste

Instructions:

  1. Marinate the meat overnight with wine, garlic, onion, herbs, and carrots.
  2. Drain and sear the meat in olive oil, then set aside.
  3. Sauté vegetables, add tomato paste, and cook for a few minutes.
  4. Return meat to pot, pour in marinade, and simmer for 3–4 hours until tender.
  5. Serve hot with mashed potatoes or polenta and a glass of Domaine Pierre Usseglio 'Not For You' for an extraordinary pairing.
