Domaine Pierre Usseglio L'Unique VDF Rouge is an innovative and refined red wine crafted in the Southern Rhône by the Usseglio family in the village of Châteauneuf-du-Pape. The 2020 vintage marks a shift in style, incorporating a significant portion of white grapes and utilising amphorae in the winemaking process. The result is a beautifully lifted, ripe red wine with finesse, freshness, and elegance, while still honouring the rich, bold character for which the estate is celebrated.

Gardianne de Taureau (Camargue Bull Stew)
Ingredients:
- 1kg bull or beef chuck, cut into cubes
- 2 onions, sliced
- 2 carrots, chopped
- 3 garlic cloves, crushed
- 750mL red wine
- 2 bay leaves
- 1 sprig thyme
- 1 tbsp tomato paste
- Black olives (optional)
- Olive oil
- Salt and pepper, to taste
Instructions:
- Marinate meat overnight in red wine with garlic, onion, herbs, and spices.
- Drain meat, reserve marinade, and brown in olive oil. Set aside.
- Sauté vegetables, stir in tomato paste, then add meat back to the pot.
- Pour in marinade, add bay leaves and thyme, then simmer for 3 hours until tender.
- Season to taste and serve with Camargue rice or crusty bread.
