Tian de Légumes Provençal (Provençal Vegetable Bake)
Ingredients:
- 2 zucchini, sliced
- 2 tomatoes, sliced
- 1 eggplant, sliced
- 1 onion, finely chopped
- 2 garlic cloves, minced
- Fresh thyme and rosemary
- Olive oil
- Salt and pepper, to taste
Instructions:
- Preheat oven to 180°C. Layer sliced vegetables in a baking dish.
- Sprinkle garlic, onion, herbs, salt and pepper between layers.
- Drizzle generously with olive oil. Cover with foil and bake for 35 minutes.
- Uncover and bake a further 10 minutes until golden.
