Recipe

Poulet aux Olives (Chicken with Olives)

Ingredients:

  • 1 whole chicken, cut into pieces
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 200g green olives
  • 2 tomatoes, peeled and chopped
  • 1 sprig thyme
  • 1 bay leaf
  • 200mL white wine
  • Olive oil
  • Salt and pepper, to taste

Instructions:

  1. Brown chicken in olive oil, then set aside. Sauté onion and garlic until soft.
  2. Add chopped tomatoes, herbs, and wine. Simmer briefly.
  3. Return chicken to the pot, add olives, cover and simmer for 45 minutes.
  4. Season to taste and serve with couscous or crusty bread and Domaine Santa Duc 'Les Saintes Vierges'.
