Tian de Légumes (Provençal Vegetable Bake)
Ingredients:
- 2 zucchini, sliced
- 2 tomatoes, sliced
- 1 eggplant, sliced
- 1 onion, sliced
- 3 garlic cloves, minced
- Olive oil
- Fresh thyme and basil
- Salt and pepper, to taste
Instructions:
- Preheat oven to 180°C. Layer vegetables vertically in a baking dish, alternating each slice.
- Drizzle with olive oil, sprinkle garlic and herbs over the top, and season.
- Cover with foil and bake for 30 minutes. Uncover and bake for another 15 minutes until tender and golden.
