Tian de Légumes (Provençal Vegetable Bake)

Ingredients:

  • 2 zucchini, sliced
  • 2 tomatoes, sliced
  • 1 eggplant, sliced
  • 1 onion, sliced
  • 3 garlic cloves, minced
  • Olive oil
  • Fresh thyme and basil
  • Salt and pepper, to taste

Instructions:

  1. Preheat oven to 180°C. Layer vegetables vertically in a baking dish, alternating each slice.
  2. Drizzle with olive oil, sprinkle garlic and herbs over the top, and season.
  3. Cover with foil and bake for 30 minutes. Uncover and bake for another 15 minutes until tender and golden.
  4. Serve warm with Domaine Santa Duc 'Les Plans' for a rustic Rhône pairing.
