Gardianne de Taureau (Camargue Bull Stew)
Ingredients:
- 1.5kg bull or beef shoulder, cubed
- 2 onions, sliced
- 3 carrots, chopped
- 3 garlic cloves, minced
- 750mL red wine
- 2 tbsp tomato paste
- 2 bay leaves
- 1 sprig thyme
- Black olives (optional)
- Olive oil
- Salt and pepper, to taste
Instructions:
- Marinate the meat overnight with wine, herbs, and vegetables.
- Drain and brown the meat in olive oil. Set aside.
- Sauté onions and carrots, add tomato paste, then return meat to the pot.
- Pour in marinade, add olives if using, and simmer covered for 3–4 hours.
