Sole Meunière (Sole in Lemon-Butter Sauce)
Ingredients:
- 2 sole fillets (about 200–250g each)
- Salt and pepper, to taste
- Flour, for dusting
- 2 tbsp unsalted butter
- 1 tbsp olive oil
- Juice of 1 lemon
- 2 tbsp chopped fresh parsley
Instructions:
- Pat the sole fillets dry and season lightly with salt and pepper. Dust each fillet with a light coating of flour, shaking off any excess.
- Heat the olive oil and 1 tablespoon of butter in a large non-stick skillet over medium-high heat. When the butter foams, add the sole fillets, skin-side down if applicable, and cook for about 2–3 minutes until golden and crisp.
- Carefully flip the fillets and add the remaining butter. Continue cooking for another 2–3 minutes until the fish is just cooked through.
- Remove the fillets from the pan and drizzle immediately with lemon juice. Sprinkle with chopped fresh parsley.
