- 1 medium onion, finely chopped
- 2 garlic cloves, minced
- 2 tbsp olive oil
- 1 cup vegetable broth
- 1/2 cup dry red wine (a light Burgundy Pinot Noir works well)
- 1 tsp dried thyme
- Salt and pepper, to taste
- For the Polenta:
- 1 cup polenta (coarse cornmeal)
- 4 cups water or vegetable broth
- Salt, to taste
- 1 tbsp olive oil (optional)
- Fresh parsley, chopped (for garnish)
Instructions:
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened, about 3 minutes.
- Add the mixed mushrooms and dried thyme. Cook until the mushrooms release their moisture and begin to brown, approximately 8 minutes.
- Pour in the red wine and vegetable broth. Allow the mixture to simmer and reduce slightly, about 5 minutes. Season with salt and pepper to taste.
- Meanwhile, bring the water or vegetable broth to a boil in a saucepan with a pinch of salt. Gradually whisk in the polenta and reduce the heat to low. Simmer, stirring frequently, for 20–25 minutes until the polenta is creamy and smooth. Stir in olive oil if desired.
- To serve, spoon a generous portion of creamy polenta onto each plate and top with the mushroom ragout. Garnish with freshly chopped parsley.
