Ingredients:

  • 500g pork tenderloin
  • Salt and pepper, to taste
  • 2 tbsp olive oil
  • 2 garlic cloves, minced
  • 1 tsp fresh rosemary, finely chopped
  • 1 tsp fresh thyme leaves
  • 250g fresh raspberries
  • 2 tbsp sugar
  • 1/3 cup light red wine (preferably a light Burgundy Pinot Noir)
  • 1 tbsp red wine vinegar
  • Fresh mint or basil, chopped (for garnish)

Instructions:

  1. Preheat your oven to 200°C. Season the pork tenderloin generously with salt and pepper, then rub with olive oil, minced garlic, rosemary, and thyme.
  2. Sear the pork in a hot ovenproof skillet over medium-high heat for 2–3 minutes per side until a golden crust forms.
  3. Transfer the skillet to the oven and roast the pork for 15–20 minutes, or until it reaches your desired level of doneness. Remove and let rest for 5 minutes before slicing.
  4. Meanwhile, in a small saucepan, combine the raspberries, sugar, red wine, and vinegar. Simmer over medium heat for about 5–7 minutes until the sauce has slightly thickened. Strain if a smoother compote is preferred.
  5. Slice the pork tenderloin and arrange on serving plates. Drizzle with the raspberry compote and garnish with fresh mint or basil.
