Recipe

Wild Mushroom Risotto with Truffle Oil

Ingredients:

  • 300g Arborio rice
  • 1 litre vegetable broth, kept warm
  • 300g mixed wild mushrooms, cleaned and sliced
  • 1 shallot, finely chopped
  • 2 garlic cloves, minced
  • 2 tbsp olive oil
  • 50g vegan butter (or unsalted butter)
  • 1/2 cup dry white wine (optional)
  • Salt and pepper, to taste
  • 1 tbsp truffle oil
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. In a large saucepan, heat the olive oil and half the vegan butter over medium heat. Sauté the chopped shallot and garlic until softened, about 2 minutes.
  2. Add the sliced wild mushrooms and cook for 5–7 minutes until they release their moisture and begin to brown. Season lightly with salt and pepper.
  3. Add the Arborio rice and stir well to coat the grains. If using, pour in the white wine and allow it to absorb completely.
  4. Begin adding the warm vegetable broth, one ladle at a time, stirring continuously. Allow the liquid to absorb before adding the next ladle of broth. Continue this process for 18–20 minutes until the rice is creamy and al dente.
  5. Stir in the remaining vegan butter and truffle oil. Adjust seasoning with salt and pepper as needed.
