Herb-Roasted Chicken with Cranberry-Balsamic Reduction
Ingredients:
- 4 chicken thighs (skin-on, bone-in)
- Salt and pepper, to taste
- 2 tbsp olive oil
- 2 garlic cloves, minced
- 1 sprig fresh rosemary, chopped
- 1 sprig fresh thyme
- 1 cup fresh cranberries
- 1/3 cup balsamic vinegar
- 1/2 cup light red wine (preferably a light Burgundy Pinot Noir)
- 1/2 cup chicken stock
- 1 tbsp honey (optional, for added sweetness)
- Fresh parsley, chopped (for garnish)
Instructions:
- Preheat your oven to 200°C. Season the chicken thighs generously with salt and pepper.
- Heat olive oil in an ovenproof skillet over medium-high heat. Sear the chicken thighs, skin-side down, for 5–6 minutes until the skin is golden and crisp; flip and sear the other side for an additional 3 minutes. Remove the chicken and set aside.
- In the same skillet, add the minced garlic, rosemary, and thyme; sauté for about 1 minute until fragrant.
- Add the cranberries, balsamic vinegar, red wine, and chicken stock. Bring to a simmer and allow the sauce to reduce for 5–7 minutes until it thickens slightly. Stir in honey if desired, and adjust the seasoning with salt and pepper.
- Return the chicken thighs to the skillet, spooning some of the reduction over them, then transfer the skillet to the oven and roast for an additional 10 minutes, or until the chicken is cooked through.
- Remove from the oven, garnish with freshly chopped parsley, and serve immediately.
