Gougères Bourguignonnes (Burgundy Cheese Puffs)
Ingredients:
- 125ml water
- 60g butter
- 75g plain flour
- 2 eggs
- 100g grated Comté or Gruyère cheese
- Salt and cracked white pepper
Instructions:
- Preheat the oven to 200°C and line a baking tray with paper.
- Bring the water and butter to a gentle boil, then add the flour all at once and stir until the mixture pulls away from the pan.
- Remove from the heat and allow to cool slightly before beating in the eggs one at a time.
- Fold in most of the grated cheese, seasoning lightly with salt and white pepper.
- Spoon small mounds of dough onto the tray and sprinkle with the remaining cheese.
- Bake for 20–25 minutes until puffed, golden and crisp.
