Tian de Légumes (Baked Provençal Vegetables)
Ingredients:
- 2 zucchinis, sliced
- 2 eggplants, sliced
- 3 tomatoes, sliced
- 1 onion, sliced
- 2 garlic cloves, minced
- 3 tbsp olive oil
- 1 tsp herbes de Provence
- Salt and pepper, to taste
- Fresh basil, for garnish
Instructions:
- Preheat oven to 180°C. Sauté garlic and onion in olive oil until soft.
- In a baking dish, layer slices of zucchini, eggplant, and tomato over the onions.
- Season with salt, pepper, and herbes de Provence. Drizzle with remaining olive oil.
- Cover with foil and bake for 30 minutes. Uncover and bake for 20 more minutes until golden.
