Herbed Wild Mushroom Risotto
Ingredients:
- 300g Arborio rice
- 200g mixed wild mushrooms, cleaned and sliced
- 1 medium onion, finely chopped
- 2 garlic cloves, minced
- 1 litre vegetable broth, kept warm
- 1/2 cup dry white wine (optional)
- 2 tbsp olive oil
- 1 tbsp vegan butter (or unsalted butter)
- Salt and pepper, to taste
- Fresh thyme or parsley, chopped (for garnish)
Instructions:
- In a large saucepan, heat the olive oil over medium heat. Sauté the chopped onion and garlic until translucent, about 3 minutes.
- Add the wild mushrooms and cook for about 5–7 minutes until they release their moisture and start to brown. Season lightly with salt and pepper.
- Add the Arborio rice and toast it for 1–2 minutes, stirring continuously until the rice is well-coated.
- If using white wine, pour it in now and stir until it is mostly absorbed.
- Begin adding the warm vegetable broth one ladle at a time, stirring frequently. Allow the rice to absorb each addition before adding the next, continuing this process for 18–20 minutes until the rice is creamy and al dente.
- Stir in the vegan butter, adjust seasoning with salt and pepper, and remove from heat.
- Garnish with fresh thyme or parsley and serve immediately.
