Ingredients:
- 4 chicken thighs (bone-in, skin-on)
- Salt and pepper, to taste
- 2 tbsp olive oil
- 1 shallot, finely chopped
- 1 cup fresh cranberries (or thawed frozen cranberries)
- 1/4 cup light red wine (preferably a light Burgundy Pinot Noir)
- 1 tbsp balsamic vinegar
- 1 tsp honey (optional)
- Fresh thyme sprigs, for garnish
Instructions:
- Season the chicken thighs generously with salt and pepper.
- Heat the olive oil in a heavy skillet over medium-high heat. Sear the chicken thighs, skin-side down, for about 5–6 minutes until the skin is crisp and golden. Flip and sear the other side for an additional 3 minutes. Remove the chicken and set aside.
- In the same skillet, add the chopped shallot and sauté until softened, about 2 minutes.
- Add the cranberries, red wine, balsamic vinegar, and honey (if using). Allow the mixture to simmer for 5–7 minutes until the cranberries soften and the sauce reduces to a compote-like consistency.
- Return the chicken to the skillet and spoon some of the cranberry-thyme reduction over the thighs. Let it simmer on low heat for a few minutes to meld the flavors.
- Garnish with fresh thyme sprigs and serve immediately.
