Grilled Sea Bass with Lemon-Caper Sauce

Ingredients:

  • 2 sea bass fillets (about 200g each)
  • Salt and pepper, to taste
  • 1 tbsp olive oil
  • 1 shallot, finely chopped
  • 2 garlic cloves, minced
  • Juice of 1 lemon
  • 2 tbsp capers, rinsed and chopped
  • 1 tbsp vegan butter (or unsalted butter if not vegan)
  • Fresh parsley, chopped (for garnish)
  • Optional: A splash of vegetable broth

Instructions:

  1. Season the sea bass fillets with salt and pepper on both sides.
  2. Heat olive oil in a non-stick skillet over medium-high heat. Add the sea bass, skin-side down, and cook for about 3–4 minutes until the skin is crisp and golden. Flip and cook for an additional 2–3 minutes until the fish is just cooked through. Remove from the pan and keep warm.
  3. In the same skillet, add the chopped shallot and garlic; sauté until softened, about 2 minutes.
  4. Add the lemon juice and capers, and if desired, a splash of vegetable broth to loosen the sauce. Stir in the vegan butter and simmer for 2 minutes until the sauce is slightly reduced.
  5. Plate the sea bass fillets, drizzle the lemon-caper sauce over the top, and garnish with freshly chopped parsley.
