Ingredients:

  • 1 red capsicum, diced
  • 1 yellow capsicum, diced
  • 1 onion, chopped
  • 3 tomatoes, chopped
  • 3 garlic cloves, minced
  • 3 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • Salt and pepper, to taste
  • Fresh basil for garnish

Instructions:

  1. Heat olive oil in a large pot over medium heat. Sauté onion and garlic until softened.
  2. Add eggplant, zucchini, and capsicum. Cook for 5 minutes, stirring frequently.
  3. Stir in tomatoes, thyme, oregano, salt, and pepper. Cover and simmer for 30 minutes, stirring occasionally.
  4. Remove from heat and garnish with fresh basil before serving.
